Zucchini Spaghetti Salad

  • 1 medium-size zucchini - Produce
  • 1 Tbsp. fresh lemon juice - Produce
  • Celtic salt to taste - Aisle 2
  • black pepper to taste - Aisle 2
  • fresh basil - Produce
  • 1 fresh tomato - Produce

Use the mandoline to cut the zucchini into spaghetti-like strips or use the food processor with shredder. Toss the zucchini spaghetti with the fresh lemon juice, salt and pepper, and serve on each plate, swirling it with a long tined fork and mounding it as high as possible for height. Top each mound with a garnish of fresh basil cut into strips. Cut tomato into quarters; remove as much of the pulp next to the outer skin without cutting into it. Cut into diamond shapes and place them along side the zucchini spaghetti and serve.
