Yummy Yam Muffins

  • 2 Cups Whole Wheat Flour - Bulk Aisle 5
  • 1 Tbsp. Rumford Baking Powder - Aisle 2
  • 1 Tsp. Salt - Aisle 2
  • 1 Tbsp. Simply Organic Ground Cinnamon, or more to taste - Aisle 2
  • 1 Tsp. Frontier Organic Cloves - Bulk Herbs & Spices
  • 1 Tsp. Simply Organic Nutmeg - Aisle 2
  • 1/2 Cup Sucanat Sugar - Bulk Aisle 5
  • 1 Cup Yam, cooked, peeled, & mashed - Produce
  • 1 Cup Horizon Organic Milk - Aisle 1
  • 1/2 Spectrum Oil - Aisle 3
  • Stir in 1 Rose Acres Egg, beaten - Aisle 1

Preheat oven to 400 degrees fahrenheit. Sift first 6 ingredients into a large mixing bowl. Add Sucanat, mashed yam, milk, oil, and egg to blender container and liquefy. Quickly add liquid ingredients to dry ones, stirring jut enough to mix. Add 1 Cup of raisins plus some chopped nuts if you like. Pour into oiled muffin pans and bake for about 20 minutes.
