Terri's Australian Tabouli

  • 1/2 lb. Cucumber, finely chopped - Produce
  • 1/2 lb. Purple Onion, finely diced - Produce
  • 1 lb. Tomato, seeded & finely chopped - Produce
  • 1 Tbsp. Balsamic Vinegar - Aisle 3
  • 1 Bunch Flat Leaf Parsley - Produce
  • 2/3 Cup Bulgar - Bulk Aisle 5
  • 2 Cups Cooked Garbanzo Beans - Aisle 2
  • 1/4 Cup Corn - Produce
  • 1/4 Cup Red Bell Pepper, diced - Produce
  • Annie's Fat Free Italian Dressing - Aisle 2

Add bulgar to boiling water and simmer until soft. Drain & rinse with cold water. Remove the leaves from the parsley and finely cop. Add to a bowl along with all of the other ingredients. Chill for about an hour before serving to allow the flavors to mingle. Makes about 6 servings.
