Summer Zest Potato Salad

  • 12-16 Organic Small New Potatoes, scrubbed - Produce
  • 2 Organic Whole Green Onions, trimmed & thinly sliced - Produce
  • 10 Organic Fresh Basil Leaves, cut into thin strips (or about 1 Tbsp. dried basil) - Produce or Bulk Herbs
  • Grated Zest of 1 Small Organic Lemon - Produce
  • 1/4 Cup Organic Brown Cow Plain Yogurt - Aisle 1
  • 2 Tbsp. Spectrum Mayonnaise - Aisle 3
  • 1 Cup Sesame Seeds, toasted in dry skillet - Bulk Aisle 5

Steam potatoes over boiling water until they are soft, or about 15 minutes. Drain and let cool. Cut potatoes into small chunks and place in a bowl. Add green onions, basil, and lemon zest. Mix the yogurt and mayonnaise together and stir into the potato mixture. Sprinkle the sesame seeds and mix well. Cover and refrigerate for at least 30 minutes before serving.
