1 Spaghetti Squash, cut lengthwise into halves & seeds removed – Produce

2 Green Onions with Tops, sliced – Produce         

2 Cloves Garlic, minced – Produce

I Tbsp Spectrum Olive Oil – Aisle 3                   

¼ Cup Imagine Vegetable Broth – Aisle 2         

1/3 Cup Parmesan Cheese – Cheese Case

1 Tsp Italian Seasoning Blend – Bulk Spices

Unrefined Salt – Bulk Aisle 5                            

Black Pepper – Bulk Spices

 

Preheat oven to 400˚ F.  Arrange squash skin side up in a shallow baking dish. Pour in ½- inch hot water and bake, covered with foil, for 30 to 40 minutes or until squash is soft. Take squash out of dish and turn it over. Using a fork, fluff the squash into strands.  Heat oil in a saucepan and cook green onions and garlic for 3 to 4 minutes. Pour in broth and add Italian seasoning and bring to a boil. Pour half the mixture into each half of the squash and combine well. Top with cheese and season with salt and pepper.
