Rice Pudding With Almond Essence

  • 1-1/2 Cups Long Grain White Rice, uncooked - Bulk Aisle 5
  • 3 Cups Water
  • 1/2 Tsp. Hain Sea Salt - Aisle 2
  • 3/4 Cup Wildflower Honey - Bulk Aisle 5
  • 2/3 Cup Dried Cherries, plumped - Packaged Bulk
  • 8 Cups Original Almond Breeze - Aisle 1
  • 2 Tsp. Flavorganics Vanilla Extract - Aisle 2

Combine rice, water and salt in large saucepan. Bring to boil over medium-high heat. Cover and reduce heat to medium-low. Simmer approximately 15-20 minutes until water is all absorbed. Stir in Original Almond Breeze and honey. Continue cooking over medium heat, stirring often until rice mixture combined with Almond Breeze starts to resemble oatmeal, approximately 30-40 minutes, stirring more frequently towards the end. Do not overcook or pudding will not be creamy when cooled. Remove from heat and stir in extract, cinnamon, and cherries.

Raisins, currants, or toasted almonds can all be added to this rice pudding. Almond extract can be added. Top with mon-dairy whipped topping and toasted almonds.
