1 Cup Quioa – Bulk Aisle 5                              

½ Cup Green Onions, chopped – Produce

2 Garlic Cloves, pressed – Produce                     

½ Cup Fresh Lemon Juice – Produce

2 Tbsp Fresh Mint, snipped– Produce                  

¼ Cup Olives, sliced – Olive Bar

½ Cup Spectrum Extra Virgin Olive Oil – Aisle 3       

Lettuce Leaves, whole - Produce

1 Cup Fresh Parsley, snipped with scissors – Produce

 

Add quinoa to 2 cups boiling water, reduce heat, and simmer for 12-15 minutes. Allow to cool. Place all ingredients, except lettuce and olives, in a mixing bowl and toss together lightly. Chill for an hour, or more, to allow flavors to blend. Use lettuce leaves to line a salad bowl. Add Tabouli mixture and garnish with olives.
