Nana's Baked Eggplant

  • Eggplant, sliced into 2 halves - Produce
  • 1 Egg - Aisle 1
  • Seasoned Whole Grain Bread - Bread Display
  • Olive Oil - Aisle 2
  • Italisn Seasonings, Salt, Black Pepper - Herbs & Spices
  • Shredded Parmesan Cheese - Cheese Dept.

Preaheat oven to 450 degree fahrenheit. Slice eggplant into about 1/2 inch slices. Dip in beaten egg, then into seasoned whole grain bread crumbs (add as desired; salt, black pepper, & Italian seasonings). Place on baking sheets sprayed with nonstick cooking spray and drizzle each slice with a bit of melted butter or olve oil. Bake until tender and slightly browned, about 20 minutes. Remove fro oven, turn eggplant slices over with a spatula, and sprinkle a tablespoon or more of parmesan cheese on top of each slice. Return to oven until cheese ,elts and browns slightly. Serve as a side dish to any Italian meal.
