Jan's Artichoke Cheese Pie

  • 1/2 cup Onion, chopped - Produce
  • 1 cup Horizon Organic Butter - Aisle 1
  • 1 jar Bella Terra Organic Artichokes, drained and chopped in food processor - Aisle 3
  • 10 Rose Acres Eggs, beaten - Aisle 1
  • 1/2 cup King arthur All-Purpose Flour - Aisle 2
  • 4 cups Organic Valley grated cheese, of chioce - Cheese Case
  • 1 cup Horizon Organic Cottage Cheese - Aisle 1
  • 1 tsp. Salt - Herbs & Spices
  • 1 tsp. Simply Organic Basil - Aisle 2
  • 1 Tbsp. Rumford Baking Powder - Aisle 2

Preheat oven to 325 degrees fahrenheit. Grease a 9x13" pan. Saute onion and artichokes in butter until onions are tender; let cool slightly. Combine eggs, onion-artichoke mixture, salt, basil, flour, and baking powder. Mix together with the grated cheese and cottage cheese. Pour into pan and bake for 50-60 minutes or just until mixture is set.
