Eggplant Parmesan

  • 1 large eggplant - Produce
  • 2 or more Tbsp. Oilio Beato olive oil - Aisle 3
  • 1 jar Newman's Own pasta sauce - Aisle 3
  • 1/2 cup Organic Valley shredded mozzarella cheese - Cheese Case
  • 1/4 cup Good Foods Parmesan cheese - Cheese Case

Remove stem from eggplant and slice into 1/2-inch thick slices. Arrange on baking sheet and drizzle each slice with a bit of olive oil, spreading with the back of a spoon. Broil 3 minutes per side, watching to make certain they brown, but don't burn. Arrange in a baking dish coated with nonstick spray. Cover with pasta sauce, sprinkle with the 2 cheeses and bake at 350 degrees fahrenheit for 20-30 minutes or until cheese is bubbly.
