Black Bean and Avocado Salad

  • 2 Large Cans Eden Organic Black Beans, drained – Aisle 2

  • 2 Avocados – Produce
  • 1 Red Bell Pepper – Produce 1 Cucumber – Produce
  • 2 Tbsp. Onion, finely chopped – Produce
  • 1 Large Tomato – Produce
  • Handful of Fresh Cilantro – Produce

Dressing:

  • 1/4 Cup Olive Oil – Aisle 3
  •  Juice of 1 Large Lime – Produce
  • Unrefined Salt & Black Pepper, to taste – Aisle 2

Chop up all the vegetables into small pieces. I try to get them the same size as the beans. Finely chop the cilantro.

Mix the beans, cilantro and veggies together in one bowl. In a separate bowl, comine the olive oil, lime juice, salt and pepper. Whisk together. Pour dressing over the bean mixture and toss till coated.

Serve these in whole wheat flour tortillas or with corn chips. Top with vegan or dairy sour cream, if desired.
