Bill's Emu Chili

  • 1/2 Cup Spectrum Olive Oil - Aisle 3
  • 2 Large Organic Onions, diced - Produce
  • 3 Organic CLoves Garlic, chopped - Produce
  • 2 Lbs. Ground Emu - Meat Dept.
  • 1/2 Tsp. Ground Black Pepper - Aisle 2
  • 2 Lbs. Eden Organic Kidney Beans - Aisle 2
  • 1 Qt. Muir Glen Canned Tomatoes, chopped - Aisle 3
  • 2 Tbsp. Simply Organic Chili Powder - Aisle 2
  • 2 oz. Whiskey
  • 1/4 Tsp. Simply Organic Ground Cumin - Aisle 2
  • 1/4 Tsp. Simply Organic Dried Oregano - Aisle 2

Heat half olive oil in large skillet and saute garlic and onions until clear. Remove garlic and onions and set aside. Turn heat to high and sear the ground emu, adding more oil as needed. Add the tomatoes, beans, and seasonings, excpet for salt. Mix well & bring to simmer for about 30-45 minutes. Taste for seasonings and make adjustments, salting as needed. Add the whiskey and taste again to make final adjustments. Simmer for 5 minutes and serve. Serves 8
