Baked Sweet Potato Casserole

  • 8, 6 oz sweet potatoes or substitute 3 cans of Farmers Market sweet potatoes - Aisle 2
  • 1 cup organic Horizon orange juice - Aisle 1
  • 1/2 cup Mediterranean Organics apricot spreadable fruit - Aisle 2
  • 2 Tbsp. grated fresh organic orange rind - Produce
  • 1 Tsp. ground organic cinnamon - Herbs & Spices
  • 1/2 cup chopped pecans - Bulk Aisle 5

Scrub potatoes thoroughly and bake at 425 degrees fahreheit for 45 minutes. Cool slightly and cut in half. Scoop out pulp. If using canned potatoes, drain and proceed with recipe. Mash potatoes, adding remaining ingredients except nut and mixing well. Pour into a 2 1/2 qt. casserole that has been sprayed with non-stick cooking spray or rubbed with oil. Sprinkle pecans over potatoes. Return to 375 degree oven, uncovered for 15-20 minutes. If you're using canned potatoes, increase cooking time about 45 minutes. You can prepare casserole day ahead, remove from fridge a couple of hours before serving, and ehat thoroughly in 375 degree oven for about 45 minutes.
