Autumn Wheat Berries
- 1 Cup Dry Wheat Berries - Bulk Aisle 5
- 2 Cups Water or Tea; for cookin use Green tea, Red Roobios, or Black tea - Bulk Herbs & Spices
- 1/2 Cup Organic Apples, finely chopped - Produce
- 1/2 Cup Dried Cranberries - Packaged Bulk
- 1/2 Cup Walnuts - Bulk Aisle 5
- 1 Tsp. Simply Organic Ground Cinnamon - Aisle 2
- 1/2 Tsp. Simply Organic Ground Nutmeg - Aisle 2
Soak wheat berries overnight in enough water to cover completely and drain. Place wheat berries in large saucepan. Bring tea or water to boil and add to wheat berries. Boil water/tea & wheat berry mixture on medium-low heat for 30-35 minutes or until soft & all liquid has been absorbed. Wheat berries should be chewy. Drain any excess liquid before adding other ingredients. In large mixing bowl combine wheat berries, fruit, nuts, & spices. Store in air tight container and refrigerate. Use within one week or freeze any leftovers. If freezing, use within one month and within one week after thawing. Use as cereal with soy milk. Enjoy with plain yogurt. Add red onion and fennel, & fresh tarragon and serve as a side dish with roasted free range chicken, pork, lamb, or beef. Also, serve with orange ginger tempeh, ginger glazed tofu, or on top of salad greens with balsamic, raspberry, or apple cider vinaigrette.
