Apple Carrot Salad
- 4 Large Carrots, Shredded - Produce
- 1 Medium Apple, Chopped - Produce
- 1/3 Cup Raisins - Produce or Snack Aisle
- 1/4 Cup Stoneyfield Plain Nonfat Yogurt - Aisle 1
- 1/4 Cup Vegenaise - Aisle 1
- 2 Tsp. Dijon Mustard - Aisle 3
- 2 Tsp. Lemon Juice Squeezers - Produce
- 1/8 Tsp. Pepper - Aisle 2 or Bulk Herbs
- 1 Green SteviaPlus Packet - Aisle 2
- 1/3 cup Shredded Cheddar Cheese - Cheese Case
Combine carrots, apple, and raisins in medium-size mixing bowl. In a small bowl, combine yogurt, vegenaise, mustard, lemon juice, pepper and stevia. Pour over carrot mixture and toss to coat. Stir in cheese.
