Ancient Harvest Quinoa Salad

  • 2 cups of cooked (follow pkg. directions) Ancient Harvest Red Quinoa - Aisle 2
  • 1/2 can of Native Forest Crushed Pineapple - Aisle 2
  • 3 tbsp. liquid from can of pineapples
  • 1/2 cup of chopped green or red pepper - Produce
  • 2 tbsp. Spectrum Organic Apple Cider Vinegar - Aisle 3
  • 1/4 cup minced red or yellow onion - Produce
  • 1 tbsp. grated fresh ginger - Produce
  • 1/2 cup raw roasted cashews - Bulk Aisle 5

Combine pineapple and all above ingredients and mix thoroughly. Add or delete items according to taste. Chill for one hour.

Serves 3
